The heresy is not using cast iron. The heresy is believing that the pan is the point.
The pan is not the point. The mechanism is the point. A well-seasoned 10.25" Lodge skillet from a department store performs every sear in this archive with identical results to a $400 heirloom pan. The protocols do not require expensive equipment. They require equipment that does not fight the technique.
This document specifies what the archive uses, why it uses it, and what gets you dismissed from the SCIF.
10.25" Lodge Cast Iron Skillet
Every sear in the archive runs through this pan. Not because Lodge is the best cast iron ever made — because it is the best cast iron at this price point, it has been stress-tested across every protocol in the archive, and it is available to anyone. The 10.25" is the correct size for two chicken thighs, a smash patty operation, or a gnocchi convergence. Bigger pans require more heat to maintain temperature. This one holds.
12" Lodge Cast Iron Skillet
When the protocol calls for a full pound of sliced pork butt, a pound and a half of salmon, or a quantity that would steam rather than sear in the 10.25", this is the platform. The 12" also runs the Al Pastor lacquer protocol — the full amount of stock requires surface area for proper reduction.
Carbon Steel Wok or Heavy Wok
Corky used a wok. This is not a protocol suggestion. This is a historical fact. The original Hunky Popcorn was made in a wok over a gas burner. A carbon steel wok seasons like cast iron, conducts heat faster, and handles the tossing motion that Hunky Popcorn requires. A cast iron pot is an acceptable substitute — the wok is the original.
On seasoning: Seasoning is polymerized oil — fat that has been heated to the point where it bonds chemically to the iron surface. Every cook adds a layer. Every layer makes the surface smoother, more nonstick, and more heat-retentive. A new pan is not ready. A used pan is ready. Use it.
On rust: Rust is surface oxidation. It is not damage. Remove it with a steel wool pad, re-season with a thin coat of oil at 450°F for one hour, and continue. The pan is not ruined. It has been interrupted.
On preheat: Cast iron requires 4–5 minutes over medium heat before introducing protein. A cold pan produces grey, steamed chicken, not a sear. The water test: a drop of water flicked into a properly heated pan evaporates in under 2 seconds. That is your signal.
On heat retention: Cast iron does not heat fast. It heats slowly and holds. This is the property the archive exploits. Once it is hot, it stays hot when the protein hits it. Stainless drops temperature on contact. Cast iron does not. That is the mechanism behind every sear in this archive.
Flat Cast Iron Press / Burger Press
A smash patty requires 400–600 PSI of even downward pressure in the first 15 seconds. A spatula flex prevents even contact. A flat press does not flex. For PP014 and any smash-format cook, this is not optional equipment — it is what makes the technique work.
Instant-Read Thermometer
The reverse sear architecture (SP-21) requires knowing when the interior is within 5°F of target before the sear begins. Guessing this produces a grey band. Reading it eliminates the grey band. A thermometer is the only instrument that can confirm the mechanism worked.
Pressure Cooker (6–8 qt)
SP-19 — Pressure-Braise Time Compression — requires a vessel that can sustain 250°F liquid temperature. A standard pot cannot. A pressure cooker converts a 3-hour braise into a 45-minute operation. For PP013, this is the mechanism. Without it, the protocol runs on oven-braise timing instead.
Heavy-Bottomed Pot, 4–6 qt
Popcorn requires even heat distribution from the bottom of the vessel. Thin-bottomed pots produce hot spots. Hot spots produce uneven popping — some kernels over-pressure and burn while others remain hull-intact. Heavy bottom = even temperature floor = maximum pop percentage.
Spider Strainer or Slotted Spoon
Breaded proteins removed from oil with tongs damage the Panko crust at the contact points before it has fully set. A spider strainer transfers without contact-point pressure. PP009 pool plating architecture requires an intact crust — the transfer instrument determines whether the crust survives to the plate.
Nonstick Pan
A nonstick surface prevents Maillard reaction adhesion. The brown fond that builds on cast iron during a sear is a flavor compound. Nonstick releases it into the atmosphere. You are discarding the most flavorful part of the cook.
INADMISSIBLE FOR SEAR OPERATIONSCanola Oil (for high-heat sear)
Canola oil has a smoke point of approximately 400°F. A proper sear requires 450°F+. At that temperature, canola breaks down and produces acrolein — the compound responsible for the bitter, acrid quality in oversmoky pans. Use avocado oil (520°F), rice bran oil (490°F), or clarified butter.
CLEARED FOR LOW-HEAT OPERATIONS ONLYCast Iron Soap Wash
Modern dish soap is not the lye soap that originally damaged cast iron seasoning. A brief soap wash does not strip a well-seasoned pan. However: the dish-soap debate is the wrong conversation. The correct conversation is: dry completely, coat lightly with oil immediately after wash, and store uncovered. The seasoning builds over time from use.

Cast iron expands and contracts with temperature change. Cold pan to 500°F oven is a rapid thermal event. A well-maintained pan survives this. A pan with microfractures — invisible to the eye — may not. The stovetop preheat over medium heat for 4–5 minutes eliminates the thermal shock variable and gives you visual confirmation that the pan is at temperature.
